Lo sa bene chi l’ha sperimentato e ha scelto di fare a meno dei sapori forti, edulcorati e invadenti per lasciare posto a quelli essenziali, veri ed equilibrati. Poi, non si torna più indietro, perché il passato appare stucchevole e anche se per curiosità ci si riaffaccia, poi si scappa e si ritorna al presente…
Un giro di parole per parlare di questa torta “essenziale”, appunto.
Essenziale perché l’avocado, dal gusto neutro, lascia posto a quello della scorza di limone, ovviamente biologico (lo dice l’etichetta) ed autoctono (in questo caso siciliano).
Adatta all’estate, lascia una sensazione di fresco senza sovrapposizioni stucchevoli.
Ingredienti per la base: 200 gr di farina di farro – 1/2 cucchiaino di sale – 2 mele golden
Ingredienti per la copertura: 2 avocado – 1 limone bio – 1 mela golden – olio essenziale di vaniglia per uso alimentare – 2 cucchiaini di stevia (opzionale)
Ridurre i due avocado a pezzetti e passarli al mixer insieme alla mela grattugiata e la scorza di limone precedentemente tritata molto fine. Prima di riporre in frigo, aggiungere 5 o 6 gocce di olio essenziale di vaniglia e, se si vuole, la stevia.
In una terrina, miscelare molto bene la farina, il sale e le due mele grattugiate.
Versare l’impasto in una teglia ø 20 cm, rivestita con carta forno bagnata e strizzata. Cuocere nel forno (a gas) a 240° per 30 minuti e poi proseguire la cottura a 180° o regolarsi in base al proprio forno. Quindi, rimuovere delicatamente la carta e porre su un piatto. Far raffreddare.
Utilizzare il cerchio di uno stampo per torta a cerniera e coprire la base con la crema, livellandola. Mettere in freezer per circa 30 minuti. Rimuovere il cerchio e livellare nuovamente la superficie, eventualmente rimuovendo con il coltello le parti della base che fuoriescono.
Riporre nuovamente in freezer per circa 2 ore, quindi tagliare a fette e servire.
La base, dalla consistenza pastosa e compatta, crea un gradevole contrasto con la copertura morbida di avocado e l’aroma del limone, che regna sovrano.
Essential cake with avocado and lemon
It’s well known that once strong, over sweetened and distorted flavors have been put apart in favour of more essential, balanced and true tastes, there’s no point of return. Even if one comes back just for couriosity, the past seems so cloying that one runs away to return to the present.
That’s just a beat around the bush to talk about this essential cake. It is named essential, since the avocado’s neutral flavor enhances the lemon’s fragrance, whose origin is organic (so the label says) and local, precisely from Sicily.
It’s an easy recipe for a summer, fresh, unconventional cake.
Base ingredients: 200 gr of spelt flour – 1/2 teaspoon of salt – 2 Golden Delicious apples
Covering ingredients: 2 avocados – 1 organic lemon – 1 Golden Delicious apple – essential oil of vanilla for food use – 2 teaspoons of stevia (optional)
Preparation:
Reduce both avocados into small pieces and put them in the mixer together with the grated apple and the previously finely chopped lemon peel. Before storing in the fridge, add 5 or 6 drops of essential oil of vanilla and, if you want, stevia.
In a bowl, mix the flour, salt and two grated apples very well.
Pour the mixture into a ø 20 cm pan, coated with wet and squeezed parchment paper. Bake in the gas oven at 240° for 30 minutes and then continue cooking at 180 ° or adjust according to your oven. Then, gently remove the paper and place on a plate. Let it cool.
Use the ring of a round cake pan with hinge to cover the base with the avocado cream and level. Put in the freezer for about 30 minutes. Remove the ring and level the surface again, cutting the rim of the base that comes out, if any.
Put back in the freezer for about 2 hours, then cut into slices and serve.
The base, featured by the compact consistency, creates a pleasant contrast with the soft avocado covering and the lemon aroma, which reigns supreme.
