Cheesecake fragola e limone

Torna la primavera e la voglia di fresco. Ecco, allora,  un’altra cheesecake, freschissima, delicatissima e dal binomio vincente fragola-limone.

Ingredienti

60 gr circa di gallette (qui, di farro bio, senza zucchero né sale) – 2 mele piccole – 250 gr di ricotta fresca di latte vaccino – 4 limoni bio – fragole fresche – 1 pizzico di sale – dolcificante naturale (opzionale, qui xilitolo naturale di betulla)

Preparazione

Sbriciolare le gallette, aggiungervi 1 pizzico di sale e unire le 2 mele grattugiate, la scorza finemente tritata di 3 limoni bio,  la ricotta e 2 cucchiaini di dolcificante naturale. Lavorare l’impasto, che dovrà riuscire compatto.

Rivestire con pellicola trasparente il cerchio di una teglia a cerniera ø 18 cm. Porlo su un piatto da portata e versarvi all’interno il composto per la base. Compattare e livellare, quindi rimuovere il telaio a cerniera.

Guarnire con le fragole tagliate piuttosto sottili e spolverizzare con la scorza di 1 limone bio, tritata molto fine e, infine, con 1 cucchiaino di dolcificante naturale.

La ricotta dà il suo meglio se abbinata ad altri ingredienti, con i quali si possono ottenere delicate farciture molto gradevoli. Oltre alla scorza di limone, potrebbe essere utilizzata quella di arancia oppure poche gocce di olio essenziale ad uso alimentare, per es. di menta o altre fragranze, particolarmente indicato per le ricette senza cottura.

 

Strawberry and lemon cheesecake

Spring is back again! Why not to prepare a fresh and delicate cheesecake, flavored with the winning combination of lemon and strawberries in its honour?

Ingredients

60 gr of crumbled puffed spelt biscuits (possibly organic, sugarfree and without salt) – 2 small apples – 250 gr fresh cow’s milk ricotta (or any other creamy, slightly sweet cheese) – 4 organic lemons – fresh strawberries – 1 pinch of salt – natural sweetener (optional, here natural birch xylitol)

Preparation

Crumble the biscuits, add 1 pinch of salt and  2 grated apples, the finely chopped zest of 3 organic lemons, ricotta cheese and 2 teaspoons of natural sweetener. Knead the dough, which must be compact.

Place a hinged mold diam. 18 cm, lined with transparent film, on a plate and arrange the crumbled biscuits and ricotta base. Compact and level. Remove the mold and cover the top with strawberries. Then, sprinkle with the zest of 1 organic lemon, very finely chopped and finally with 1 teaspoon of natural sweetener.

Ricotta cheese combines very well with other ingredients, to  create delicate and tasty fillings.

In addition to the lemon peel, it could be used orange  peel or a few drops of essential oil for food use, eg. mint or other fragrances, particularly suitable for recipes without cooking.

Milano: Quartiere Isola – Porta Nuova – Porta Garibaldi

In una città abituata da sempre a costruire, demolire e ricostruire, non è una novità vedere accanto al nuovo, l’antico.

Alte pareti di vetro e acciaio sembrano quasi schiacciare i bassi edifici a ringhiera nell’inconfondibile colore giallo Milano, con i tetti di tegole rosse. Sopravvivono imperterriti, nonostante tutto.

Quartiere Isola, Porta Nuova, Garibaldi

Quale altra zona, in città, può offrire uno spaccato tanto contrastante se non quella tra Porta Garibaldi, Porta Nuova e il quartiere Isola?  Vi si arriva comodamente con la metropolitana, fermata Garibaldi, e si può camminare in una vasta zona pedonale che offre diverse cose interessanti da vedere.

Piazza Gae Aulenti

Naturalmente, i nuovi grattacieli futuristici sono i primi ad attirare l’attenzione. Segue Piazza Gae Aulenti, con l’installazione di 23 tubi in alluminio color oro che rappresentano una sorta di lunghe trombe, progettate per mettere in comunicazione la superficie con i piani sottostanti.

Fontane rotonde rasoterra sembrano voler ricordare la ricchezza di acque sorgive su cui è sorta la città.

Piante aromatiche al nuovo quartiere Isola

Due torri residenziali, con esclusive soluzioni abitative, sono i boschi verticali della città. Aree verdi private che si sviluppano in altezza, mentre al di sotto cresce, piantata di recente, una variegata vegetazione.  Alberi, piante da bulbo, aromatiche e cespugli su un’area di circa 100.000 mq costituiscono, infatti, il progetto della Biblioteca degli Alberi.

Sembra impossibile pensare, ora, che  gran parte di quella superficie tutta vetro, alluminio, design e relax fosse occupata, in un tempo non troppo lontano, da terreno non asfaltato che ospitava un grande luna park e i circhi che arrivavano in città.

Eppure, è così. Guardandosi intorno, con gli alti grattacieli sullo sfondo, ci si chiede fino a quando riusciranno a sopravvivere, quelle vecchie case a ringhiera lì accanto.

 

Milan – Isola district, Porta Nuova, Porta Garibaldi

In a city accustomed to building, demolishing and rebuilding, it’s not unusual to see the old next to the new.

High walls of glass and steel almost seem to crush the old  typical buildings, painted  in yellow Milan color, with red-tiled roofs. They survive determinedly, despite everything.

A few other places in the city can offer such a contrasting view like the area among Isola district, Porta Nuova and Porta Garibaldi. Once easily reached by subway from the stop Garibaldi, you can walk in a wide pedestrian area.

No doubt, the modern skycrapers  are the most eye catching elements. Then, take a look at Piazza Gae Aulenti, with the installation of 23 gold-colored aluminum tubes in the shape of long trumpets, designed to put the surface in communication with the floors below.

Round fountains close to the ground bring to mind the abundant spring waters on which Milan was built.

Two residential towers, with exclusive housing solutions, are the so-called vertical forests. But if such private green areas grow in height, different plants grow down below. Trees, bulb plants, aromatic plants and bushes, recently planted on an area of about 100,000 square meters are part of the project named  The Library of Trees.

It’s difficult to  imagine how most of the present innovative yet eco-friendly district once was a wide, unpaved area occupied by  a big fun fair and the circuses arriving in Milan.

Looking around, at the tall skyscrapers in the background, one wonders how long those old  houses with outside common balconies will survive, anyway.
